Ceylon Tea
Sri Lanka is renowned for its fine Tea the world over. The name Ceylon itself is synonymous with tea throughout the world.
The differences between the categories of tea are a result of the processing of the leaves. Through four main methods of processing, four types of tea are produced.
1. Black tea is withered, fully oxidized and dried.
2. Green tea is simply withered and then dried.
3. Oolong tea, popular in China, is withered, partially oxidized, and dried.
4. White tea, a rare Chinese tea, is the least processed. White tea is not oxidized or rolled, but simply withered and dried by steaming.
